SPICY APPLE WALNUT SQUARES
 

1 lg. egg
1 lg. tart green apple, peeled, cored and chopped
3/4 - 1 c. chopped apple
1/2 c. light brown sugar, firmly packed
3/4 c. unsifted self-rising cake flour
1/4 tsp. ground nutmeg
1/4 tsp. ginger (ground)
1/2 tsp. vanilla
1/3 c. walnuts, chopped fine
1/4 tsp. cinnamon

Use a light touch in mixing these bar cookies, otherwise they may toughen. Beat egg and sugar hard until creamy, stir in apple. Combine flour with the cinnamon, nutmeg, and ginger and stir into apple mixture along with vanilla and walnuts. Spoon into 8 x 8 x 2 baking pan that has been sprayed with non-stick vegetable cooking spray. Smooth the top with rubber spatula. Bake at 350 degrees for 20-25 minutes until springy to the touch. Remove from oven and cool upright in pan or on wire rack for 30 minutes.
