CLASSIC CHIFFON CHEESECAKE
 

1/4 c. butter
1 c. graham crumbs
1/4 c. sugar
2 (8 oz.) pkgs. cream cheese
1 can sweetened condensed milk
3 eggs (separated)
1/4 c. lemon juice
1/4 tsp. salt

1. Preheat oven 375 degrees. In pan melt butter, stir in crumbs and sugar. Pat in bottom of springform pan. Bake 7 minutes, then cool.

2. Reduce temperature to 300 degrees. Beat cream cheese until fluffy. Add condensed milk and egg yolks. Beat until smooth. Stir in lemon juice. Set mixture aside.

3. Beat egg whites and salt until stiff.

4. Fold cream cheese mix with egg whites.

5. Pour in springform pan over crumb mixture. Bake 50-55 minutes.
