20 crushed Ritz crackers 3 egg whites, room temperature 1 c. sugar 1 tsp. vanilla 1/2 tsp. baking powder 1/2 c. chopped nuts 1/2 c. mini chocolate chips Grind crackers and mix in chopped nuts. Set aside. In bowl, put egg whites; beat and add baking powder until you have soft peaks. Gradually add sugar and vanilla. Continue beating until egg whites are stiff. Fold in cracker mixture. Add chocolate bits. Turn into ungreased 9 inch pie plate. Bake in a 300 degree oven for 50 minutes. TOPPING: 1/2 c. heavy cream 3 tbsp. powdered sugar 3 tsp. instant cocoa If preparing topping: Whip cream, sugar and cocoa until stiff. Spread on pie. Decorate with extra mini chips. |
