RHUBARB TORTE
 

1 c. flour
2 tbsp. sugar
1/8 tsp. salt
1/2 c. butter

FILLING:

3 egg yolks
1 1/4 c. sugar
3 tbsp. flour
1/3 c. cream
2 1/2 c. rhubarb sliced thin

MERINGUE:

3 egg whites
6 tbsp. sugar

Blend mixture for crust. Pat into pan. Bake 20 minutes at 325 degrees.

Mix filling in order given. Pour into baked crust. Then bake 40 minutes at 350 degrees.

Beat egg whites. Add sugar. Then cover baked torte with meringue. Place in oven again and brown meringue - 15 minutes at 350 degrees.
