KOLACE
 

2 c. milk
1/2 c. sugar
1 c. shortening (part butter)
5 1/2 c. flour
1 1/2 cakes yeast
3 egg yolks
A pinch or two of salt

Scald milk. Add shortening and set aside to cool. Lukewarm. Dissolve yeast in 1/4 cup of warm water with 1/2 teaspoon sugar, set aside.

Put egg yolks into a large bowl, then beat. Add salt and sugar. Stir in the milk mixture, then the yeast. Gradually add flour, beat very hard until dough is satiny smooth. If dough is sticky, beat in a little more flour. Cover bowl and let rise until dough is double in bulk.

On a well-floured board, flatten dough to about 1/2 inch; cut in 2 x 2 inch squares. Stretch these squares and put about 1 teaspoon of filling in the center, then fasten ends so the filling is covered. Place on a greased baking sheet and spread each kolace with melted butter. Bake at 350 degrees for about 20 minutes or until lightly browned.

FILLING:

1 pkg. farmers dried cheese (break up fine)
2 egg yolks
A little lemon rind & sugar to taste

Mix all ingredients together. If desired you may use prunes, apricots, poppyseeds, etc. instead of the cheese.
