SWEDISH DESSERT PANCAKES
 

3 eggs
1 1/4 c. milk
3/4 c. white flour
1 tbsp. granulated sugar
1/4 tsp. salt

Beat egg until thick and lemon colored. Stir in milk. Add dry ingredients to egg mixture. Mix until smooth. Pour a small amount of batter onto a moderately hot, buttered pan. QUICKLY tilt pan until batter covers entire pan in a very thin layer. Turn pancake over when golden on the bottom side.

Serve with melted butter and sugar, or spread jam on pancake, roll and dust with confectioners' sugar.
