1 c. all purpose flour
1 tsp. ground cinnamon
1/2 tsp. each baking powder & baking soda
1/4 tsp. salt
1/2 c. butter or regular stick butter (not spread), room temp.
1/2 c. granulated sugar
1/2 c. packed brown sugar
1 lg. egg
1 tsp. vanilla extract
1 1/4 c. quick cooking oats
1/2 c. raisins
3/4 c. chopped pecans or raisins
1. Heat oven to 375 degrees. Have cookie sheet(s) ready.
2. Mix flour, cinnamon, baking powder, baking soda and salt.
3. Put butter, the sugars, egg and vanilla into a large bowl. Beat with electric mixer until creamy. With mixer on low speed gradually add flour mixture. Beat just until blended. Beat in oats, raisins and nuts.
4. Roll heaping measuring tablespoonfuls of dough in balls. Place 2" apart on ungreased cookie sheet.
5. Bake 10 to 12 minutes until cookies are light golden brown.
6. Cool on cookie sheet 1 minute before removing to wire rack to cool completely. Makes 34.
