1 (8 oz.) pkg. dried apricots
3/4 c. sugar
1 tsp. cinnamon
Soak apricots overnight in enough water to cover.
In a saucepan, cook soaked apricots in water to cover (just add more water to soaking water; dried apricots absorb a lot of liquid) for 5 minutes over medium heat. Stir in sugar and cinnamon and cook for 5 to 10 minutes longer, until tender. Apricots should still hold their shape. Cool and use as filling for Fried Pies. Yield: enough filling for 12 pies.
