LIGHT PEACH SOUFFLE
 

1 peach, peeled and cut into thin slices
2 tbsp. sugar
1/4 tsp. lemon juice
Pinch salt
2 egg whites

Heat oven to 350 degrees. Butter and sugar 4 individual souffle dishes. Sprinkle the cut peach with 1 tablespoon sugar and the lemon juice. Beat egg whites with salt until they hold peaks. Gradually beat in the remaining 1 tablespoon sugar and continue beating until the whites hold stiff peaks.

Gently fold in peach slices. Divide among dishes and smooth tops. Bake until puffed and browned, about 18 minutes.
