OLD FASHIONED SOFT PUMPKIN COOKIES
 

2 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon (or more to taste)
1/2 tsp. nutmeg
1/2 c. soft butter
1 1/2 c. sugar
1 c. solid pack pumpkin
1 egg
1 tsp. vanilla extract

GLAZE:

2 c. powdered sugar
3 tbsp. milk
1 tsp. vanilla extract
1 tbsp. melted butter

Blend until smooth.

In medium bowl, combine flour, baking powder and soda, salt, cinnamon and nutmeg; set aside. With mixer cream butter and sugar in large bowl. Add pumpkin, egg and vanilla; beat until light and creamy. Add dry ingredients; mix well. Drop by rounded tablespoon onto greased cookie sheets. Smooth tops of cookies. Bake in preheated 350 degree oven for 15 to 20 minutes, or until light brown. Cool on wire rack. Drizzle with glaze.

For variation, stir into batter one of the following:

1 c. raisins
1 c. nuts (pecans are excellent)
1 c. uncooked oats
1/2 c. drained crushed pineapple
