OATMEAL SCOTCHIE PAN COOKIES
 

2 c. sifted flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. butter, softened
1 1/2 c. firmly packed brown sugar
2 eggs
1 tsp. water
1 1/2 c. quick oats, uncooked
1 (12 oz.) pkg. butterscotch chips
1/2 tsp. orange extract

Preheat oven to 375 degrees. In small bowl, combine flour, baking powder, baking soda, and salt; set aside. In large bowl, combine butter, brown sugar, eggs, and water; beat until creamy. Gradually add flour mixture. Stir in oats, butterscotch chips and orange extract. Spread into greased 15 x 10 x 1 inch baking pan. Bake at 375 degrees for 20 to 25 minutes. Cool completely. Cut into 2 inch squares. Makes 35 2 inch squares.
