MOLASSES COOKIES
 

1/2 cup butter
3/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
1/4 cup molasses (not blackstrap)
1 teaspoon baking soda
1 1/2 cups flour
pinch of salt

Preheat oven to 350°F.

Cream together butter and brown sugar. Add egg and vanilla. Blend well. Stir together molasses and baking soda. Add to the creamed mixture and blend well.

Drop the dough by teaspoons onto a greased or parchment lined cookie sheet, leaving 2 inches between drops.

Bake at 350°F. for 10 minutes. Allow the cookies to firm up on the cookie sheet before transferring them to wire racks to finish cooling.

Cooks Note: This cookie will flatten during baking to give a soft center with crisp edges.

Makes about 3 dozen cookies.
