1/2 c. shortening 1 c. sugar 2 eggs, beaten 1 c. pumpkin 2 c. sifted flour 2 tsp. baking powder 1 tsp. salt 2 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/4 tsp. ground ginger 1 c. raisins 1 c. walnuts Preheat oven 350. Cream shortening; gradually beat in sugar. Add eggs and pumpkin; mix well. Sift flour, baking powder, salt and spices together; add to pumpkin mixture. Mix well. Add raisins and nuts. Drop by heaping teaspoon onto greased cookie sheet. Bake about 15 minutes until firm to touch. Remove from sheet; cool. LEMON ICING: Combine: 2 c. powdered sugar 1 tbsp. each lemon rind and grated lemon rind Add just enough milk to make icing spreadable. Put on cookies. Very good. |
