OATMEAL SCOTCHIES
 

1 1/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. (2 sticks) butter, softened
3/4 c. sugar
3/4 c. firmly packed brown sugar
2 eggs
1 tsp. vanilla extract or grated peel of 1 orange
3 c. quick or old fashioned oats, uncooked
1 (12 oz.) pkg. (2 c.) Nestle's Toll House butterscotch flavored morsels

Preheat oven to 375 degrees. In small bowl, combine flour, baking soda, salt and cinnamon, set aside.

In large mixer bowl, beat butter, sugar, brown sugar, eggs and vanilla extract or orange peel until creamy. Gradually beat in flour mixture. Stir in oats and Nestle's Toll House butterscotch flavored morsels. Drop by measuring tablespoonfuls onto ungreased cookie sheets. Bake 7 or 8 minutes for chewier cookies; 9-10 minutes for crisper cookies. Makes about 4 dozen cookies.

OATMEAL SCOTCHIE PAN COOKIE:

Preheat oven to 375 degrees. Spread dough into greased 15 1/2 x 10 1/2 x 1 inch baking pan. Bake for 18-22 minutes or until very lightly browned. Cool completely. Cut into thirty-five 2-inch squares.
