BUTTERSCOTCH OATMEAL COOKIES
 

2 c. butter
2 c. brown sugar
2 c. white sugar
2 tsp. vanilla
4 med. eggs
3 c. flour
2 tsp. salt
2 tsp. baking soda
6 c. uncooked oatmeal
1 (12 oz.) pkg. butterscotch chips
1 1/2 c. chopped pecans
3/4 c. coconut

Cream together butter and sugar until fluffy. Add vanilla and eggs one at a time, beating well.

In separate bowl, mix flour, salt and baking soda. Add to creamed mixture and then add remaining ingredients and mix well. Bake on ungreased cookie sheet. Drop by tablespoons about 1 inch apart. Bake at 350 degrees about 9 minutes. Do not over bake.
