QUAKER'S BEST OATMEAL COOKIES
 

1 1/4 c. butter (2 1/2 sticks)
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. salt; optional
1 tsp. cinnamon
1/4 tsp. nutmeg
3 c. oats (quick or old fashioned), uncooked
1 c. raisins; optional

Heat oven to 375 degrees. Beat together butter and sugars until light and fluffy. Beat in egg and vanilla. Combine next 5 ingredients; add to butter mixture, mixing well. Stir in oats and raisins. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8-9 minutes for chewy cookies; 10-11 minutes for crisp cookies. Cool 1 minute on cookie sheet; remove to wire cooling rack. 4 1/2 dozen. Store in tightly covered container.
