2 c. flour 2 tsp. baking powder 1 tsp. soda 1/2 tsp. salt 2 tsp. cinnamon 2 c. sugar 1 c. Wesson oil 4 eggs 2 c. canned pumpkin 1 c. chopped walnuts (optional) FROSTING FOR PUMPKIN BARS: 1 (4 oz.) pkg. cream cheese 1 tsp. vanilla 1 cube butter 3 c. powdered sugar Beat eggs, add sugar slowly, then oil and pumpkin. Then dry ingredients with the flour being the last. Pour into large greased jellyroll pan or a cookie sheet with a lip. Bake at 350 degrees for 25 to 30 minutes. Frosting: Blend all ingredients together until smooth. Spread frosting on cooled bars. Then cut into bar size. |
