3 eggs, well beaten 1 c. raisins 1 tsp. vanilla 1 c. butter 1 c. brown sugar 1 c. white sugar 2 1/2 c. flour 1 tsp. salt 1 tsp. ground cinnamon 2 tsp. baking soda 2 c. oatmeal 3/4 c. chopped pecans Combine eggs, raisins and vanilla and let stand for 1 hour. Cream butter and sugars. Mix dry ingredients and add to sugar mixture. Mix well. Blend in egg-raisin mixture and nuts. Dough will be stiff. Drop by heaping teaspoonfuls on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes or until lightly browned. |
