2 c. flour 1 1/2 c. sugar 2 tsp. baking powder 2 tsp. ground cinnamon 1 tsp. baking soda 1/4 tsp. salt 1/4 tsp. ground cloves 4 eggs, beaten 1 (16 oz.) can pumpkin 1 c. cooking oil Combine flour, sugar, baking powder, cinnamon, soda, salt and cloves. Stir in eggs, pumpkin and oil until mixed thoroughly. Spread batter into an ungreased 15 x 10 x 1 inch pan. Bake in a 350 degree oven for 25 to 30 minutes or until toothpick inserted near center comes out clean. Cool on wire rack. Frost with cream cheese frosting. FROSTING: 2 (3 oz.) pkgs. cream cheese 1/2 c. butter, softened 2 tsp. vanilla 4 1/2 to 4 3/4 c. powdered sugar In bowl, mix cream cheese, butter and vanilla until light and fluffy. Gradually add 2 cups powdered sugar; beat well. Gradually add enough remaining powdered sugar to make frosting of spreading consistency. |
