1 c. flour
1/4 c. powdered sugar
2 eggs
2 tbsp. lemon juice
1/4 tsp. salt
1/2 c. butter, softened
1 c. granulated sugar
2 tsp. grated lemon peel (optional)
1/2 tsp. baking powder
Powdered sugar
Mix flour, butter and 1/4 cup powdered sugar together. Press in ungreased square pan 8x8x2 inch, building up 1/2 inch edges.
Bake granulated sugar, eggs, lemon peel, lemon juice, baking powder and salt together until light and fluffy, about 3 minutes; pour over baked layer. Bake just until no indentation remains when touched in center.
Cool; sprinkle with powdered sugar. Cut into about 1 inch squares.
Substitute lime peel and lime juice for the lemon. Beat in 2 tablespoon flour with the eggs.
