LEMON BARS
 

SHORTBREAD:

2 c. flour
1/2 c. confectionery sugar
1 c. butter

Sift dry ingredients, cut in butter until it clings together. Press into 9 x 13 dish and bake at 350 degrees for 15 to 20 minutes.

While shortbread is baking, make topping.

TOPPING:

4 beaten eggs
2 c. sugar
1/3 c. lemon juice
1/2 tsp. baking powder
Pinch of salt

Mix ingredients and pour over warm shortbread. Bake at 350 degrees 20 to 25 minutes. Do not over cook! Sprinkle with XXX sugar. Cool and cut into bars.
