FARM-STYLE CHILI CON QUESO
 

2 slices bacon, chopped
1 sm. onion, chopped
1 med. tomato, peeled, seeded, chopped
1/2 c. celery, chopped
1 (7 oz.) can green chili salsa
1/4 tsp. salt
2 c. shredded Monterey Jack cheese (16 oz.)
Tortilla chips for dipping

In a medium skillet, cook bacon. Add onion, tomato and celery. Stirring occasionally, cook over medium heat until onion is tender. Stir in salsa and salt. Over low heat stir in cheese until melted. Do not boil. Pour into fondue pot or chafing dish to keep warm. Serve with chips.
