CHEESE TRIANGLES
 

3 eggs, lightly beaten
1 lb. Feta cheese, crumbled
1 (8 oz.) pkg. cream cheese, softened
1/4 c. parsley, cut fine with scissors
1 lg. onion, grated
1 lb. filo dough
2 sticks butter, melted
2 baking sheets
New 1 inch paint brush

Combine eggs, Feta, and cream cheese. Blend with fork thoroughly and add parsley and onion. Melt two sticks of butter. Cut filo in half; fold into thirds lengthwise, buttering each layer. Place one teaspoon of filling at the end of each strip and proceed to fold as you would a flag. Continue until all filling and filo are used. Place triangles in buttered baking pan and brush each triangle once again with butter. Bake at 375 degrees for 20 minutes. Oven must be preheated to achieve "full puff". Completed color of baking should be almost golden.
