60 snow peas (approximately 3/4 lb.), washed 2 (6 1/2 oz.) cans crab meat, drained 4 oz. cream cheese, softened 1 green onion, including top, finely chopped 1 tsp. fresh lemon juice 1 tsp. curry powder Remove the stems from the pods and very carefully slit the seed-side of the pods with a small sharp knife, making a pocket. Beat filling ingredients together in a large bowl until well combined. (This may be done in a food processor). Stuff each pod by spreading filling into the pocket with a knife. Stuffed pods may be covered and refrigerated for several hours. |
