STUFFED MUSHROOMS
 

1 1/2 lb. med.-sized mushrooms
4 oz. shredded mozzarella cheese
Stove Top stuffing, crumbs only
1/2 lb. bacon
1 scallion, diced fine

Wipe mushrooms with paper towel. Remove stems and dice. Cook bacon; retain fat. Saute scallions and stems in some of the fat. Crumble bacon. On low heat, add crumbs; mix well. Add cheese and bacon; mix well. Cook 1 to 2 minutes to melt cheese.

Put mushrooms on large cookie sheet. Place stuffing on top of each mushroom. Bake at 350 degrees for 15 minutes. Put under broiler to brown (1 minute -watch closely). Serve hot.

NOTE: If need be, can be reheated easily. Just rebake for 10 minutes. Do not freeze.
