1/4 c. salad oil
1 sm. onion, chopped
1 clove garlic, minced
2 1/2 c. shredded zucchini
6 eggs, beaten
1/3 c. fine dry bread crumbs
1/2 tsp. each salt, dry basil and oregano leaves
1/4 tsp. pepper
3 c. shredded cheese - Cheddar/Mozzarella mix
1/2 c. Parmesan cheese
1/4 c. toasted sesame seeds
In a wide frying pan, combine oil, onion and garlic; cook until limp about 4 minutes. Add zucchini and cook until tender-crisp, about 3 minutes.
Mix eggs with bread crumbs, herbs, cheese and zucchini mixture.
Spread into a greased 9x13 inch dish. Sprinkle with Parmesan cheese and sesame seeds. Bake in 325 degree oven about 30 minutes. Let cool 15 minutes.
Cut into 1 inch squares and serve warm or at room temperature or cold. 10 dozen.
