ZUCCHINI APPETIZERS
 

3 c. thinly sliced unpared zucchini (about 4 small)
1 c. Bisquick baking mix
1/2 c. grated Parmesan cheese
1/2 c. finely chopped onions
2 tbsp. snipped parsley
1/2 tsp. salt
1/2 tsp. dried marjoram or oregano leaves
Dash of pepper
1 clove garlic, finely chopped
1/2 c. vegetable oil
4 eggs, slightly beaten

Heat oven to 350 degrees. Grease rectangular pan, 13 x 9 x 2 inches. Mix all ingredients; spread in pan. Bake until golden brown, about 25 minutes. Cut into rectangles, about 2 x 1 inch.

Refrigerate any remaining appetizers. Makes about 4 dozen.
