HAWAIIAN SAUSAGE CASSEROLE
 

1 (20 oz.) can pineapple chunks, juice pack
3 or 4 sweet potatoes, peeled or 1 can, drained
1 pkg. cooked smoked sausage links, slashed in 1-inch spaces
3 tbsp. brown sugar
2 tbsp. cornstarch
1 tbsp. butter

Drain pineapple. Save juice. Add water to make 1 1/4 cups. Arrange pineapple and 1-inch slices of potatoes and sausage pieces in 2-quart baking dish.

In saucepan, mix brown sugar and cornstarch. Gradually blend in juice. Cook and stir until thick. Remove from heat. Add butter. Pour over casserole. Cover and bake at 350 degrees for 40-45 minutes.
