EASY ENCHILADA CASSEROLE
 

1 1/2 lb. ground beef
1 1/2 lb. Velveeta cheese, cubed
1 can cream of mushroom soup
1 can Rotel
1 pkg. corn tortillas
1 can chili beans
1 onion, chopped
Corn chips, crushed

Brown ground beef in skillet, stirring until crumbly. Combine cheese, soup and Rotel in saucepan. Heat until cheese is melted, stirring constantly.

Layer tortillas, ground beef, chili beans and onion in 9 x 13 inch baking pan. Spread cheese mixture over layers. Top with corn chips. Bake at 350 degrees for 20 minutes.
