1/2 c. chopped onion 1 tbsp. melted butter 1 lb. ground beef 2 cans Trappey's jalapeno black eye peas 2 c. cooked minute rice 1 can tomatoes, drained & chopped 1 c. shredded cheddar cheese Saute onion in butter until tender. Add ground beef and brown. Stir in jalapeno black eye peas, rice and tomatoes. Mix well. Spoon mixture into a 2 quart casserole. Sprinkle cheese over top. Bake at 350 degrees for 20 minutes. Hint: Serve with cornbread. |
