"SOMBRERO" STUFFING CASSEROLE
 

1 lb. ground beef or turkey
1 jar med. hot salsa
1 egg, slightly beaten
1/2 pkg. taco seasoning mix
1/3 c. shredded cheddar cheese or Monterey Jack cheese
1 med. green pepper, minced
2 c. Stove Top chicken flavor stuffing mix
1/2 c. water
1 c. sweet corn

Brown beef in skillet with 1/2 cup of the green pepper, drain. Stir in 1 cup of the salsa and 1/2 cup of the stuffing mix. Press mixture around edge of 9 inch pie plate. Combine the remaining green pepper, salsa, taco seasoning mix and stuffing mix with the egg, water and corn. Spoon into center of pie plate ("Sombrero"). Bake at 400 degrees for 15 minutes. Remove from oven, sprinkle with cheese and bake 5 minutes longer. Garnish with corn chips and cherry tomatoes.
