2 1/4 c. sugar
1/2 c. water
1/2 c. light corn syrup
1/4 tsp. salt
1 1/2 tsp. vanilla
1/2 c. chopped nuts (optional)
1/2 c. candy cherries (optional)
2 egg whites
Mix together sugar, water, corn syrup, and salt in 2-quart casserole dish. Loosely cover with lid or plastic wrap. Microwave on high (100%) 5 or 6 minutes or until boiling. Uncover and microwave on high (100%) 10 minutes or until hard ball stage is reached.
Meanwhile, beat egg whites until stiff. Slowly pour the hot syrup over the egg whites, while beating at high speed. Add vanilla and continue to beat 4 or 5 minutes or until candy holds shape. Fold in nuts and cherries. Quickly drop teaspoonfuls of candy onto waxed paper or pour into buttered 6x10x2 inch dish. Yield: 1 pound.
