PICE AR Y MAEN - WELSH CAKES
 

1 lb. self-rising flour
6 oz. sugar
4 oz. currants (or raisins)
8 oz. butter
2 eggs
Milk

1. Mix flour and sugar.

2. Cut butter into the mixture until it is as bread crumbs.

3. Add dried fruit.

4. Add eggs.

5. If necessary add a little milk so that the mixture is moist.

6. Roll out on floured board and cut with round cookie cutter.

7. Cook on ungreased griddle or heavy frying pan as for pancakes.

8. Best eaten fresh.
