1/2 c. shortening or butter 1 1/2 c. sugar 2 eggs, well beaten 1 c. banana pulp (3 med.) 1 tsp. vanilla 1/3 c. milk 2 tbsp. vinegar 1 tsp. soda 1/2 tsp. salt 2 c. flour Cream shortening and sugar. Add eggs and vanilla, beating until fluffy. Beat in banana pulp. Add flour and salt alternating with vinegar-soda-milk mixture. Beat well. Pour into baking pan, sprinkle topping over batter. Bake in 9 x 13 inch pan for cake or 11 x 16 inch for bars. Grease and flour the pan. TOPPING: 1 c. crushed crispy rice cereal or corn flakes 1 c. brown sugar 1/2 c. flour 2/3 c. butter 1 c. milk 1 c. coconut Mix first 3 ingredients, then add softened butter and mix until crumbles. Sprinkle evenly on top of batter. Bake at 350 degrees for 40 minutes. |
