White cake: I use 1 box mix (white) and one Jiffy white box mix (9 ounce). Use all egg whites plus one extra white. Use 1/2 cup oil and water as directed. Add desired amount of coconut and a touch of vanilla. This makes a large cake.
White frosting: Cook until thickened: 1 cup milk and 4 tablespoons of flour. Let cool. Cream well 1 cup sugar and 1 cup shortening (or 1/2 cup butter or 1/2 cup shortening - but don't substitute all butter or the frosting won't be white). Add cooked mixture to creamed and beat well. Add 1 teaspoon vanilla.
