PINEAPPLE UPSIDE - DOWN CAKE
 

5 tbsp. butter
1/2 c. brown sugar
1 can pineapple slices
1 white cake mix batter

Grease sides of a loaf pan 12 3/4 x 9 x 2 inches. Melt butter in bottom of loaf pan. Sprinkle sugar evenly over butter. Arrange pineapple on top of butter-sugar coating. Pour batter over fruit.

Bake upside down cake in 350 degree oven for about 40 minutes, until toothpick stuck into center comes out clean. Serve topped with whipped cream. May also be done with sliced peaches instead of pineapple.
