CHOCOLATE AND CHEESE CAKE
 

2 lbs. Ricotta cheese
3/4 c. sugar
1 tsp. vanilla
4 eggs
1 pkg. chocolate cake mix

Follow directions for any package of chocolate cake mix. Grease and flour 13x9 inch pyrex dish.

Combine Ricotta cheese, sugar, vanilla and eggs. Mix with electric mixer until blended well and smooth. Pour Ricotta mixture directly over chocolate cake mix.

Bake at 325 degrees for pyrex dish; bake at 350 degrees for corning cake dish for 1 hour.

Ricotta mixture goes to bottom of the cake mixture during cooking process. When you take it out of oven it may appear very soft in center of cake, however set it down to cool for a while and then cover with foil and place in refrigerator to settle for cutting into small pieces to serve.
