2 tbsp. chili powder
1/2 c. shredded Cheddar cheese
4-6 drops of lime juice
4 tbsp. olive oil
6-8 medium round flour tortillas
1/2 lb. sirloin steak (thin cut)
Start by slicing the sirloin steak into thin strips about 3/4 inch long.
Once sliced, mix the chili powder, lime juice, and olive oil in a plastic bag.
Allow meat to marinate at least 4 hours, but preferably overnight.
Grill the meat in an iron skillet on medium heat until done.
Once the meat is done, place a small layer of cheese on the tortillas followed by 4-5 strips of meat.
Fold the bottom of the tortilla (perpendicular to the meat strips) up about 1/2 inch. Then fold the tortilla (parallel to the meat strips) in half.
In a separate skillet, coat a thin strip of olive oil and allow to get hot on medium heat. Place the tortillas folded side-down on the skillet and grill until the fold sticks together. Once the first side is grilled, flip and grill the other side.
Makes 2-3 servings.
