BARBARA'S BLACK BEANS
 

2 (10 oz.) pkgs. black beans
1 ham hock or 2 slices of bacon
4 med. onions
6 lg. cloves of garlic
1/2 lg. green pepper
5 bay leaves
1 tbsp. oregano
1/2 tsp. cumin
3 tbsp. vinegar
2 tbsp. olive oil
Salt to taste

Place black beans with large amount of water in pressure cooker. Add ham hock or bacon, salt, vinegar, bay leaves, oregano, and cumin. Chop onions, garlic, and green pepper. Add to cooker. Cook under pres-sure for about 50 minutes. Uncover, add olive oil, and simmer. Taste and add more salt or vinegar as needed.

FOLLOW DIRECTIONS OF YOUR PRESSURE COOKER!! If you do not have a pressure cooker, soak beans overnight and cook slowly until tender. Add olive oil towards the end.
