1 1/2 lbs. fresh or frozen string beans 2 tbsp. butter 1 tsp. lemon juice Salt and pepper as desired 1/2 c. freshly grated Parmesan cheese In a saucepan, bring 3 cups water to a boil. Add string beans and blanch until crisp-tender, about 3 minutes; drain. Melt butter; add lemon juice. Pour butter mixture over beans; toss lightly to coat. Season with salt and pepper and sprinkle with Parmesan cheese. Serves 6. |
