TOFU CHEESE 'N VEGIE BAKE
 

2 tbsp. soy sauce
1/8 to 1/4 tsp. garlic powder
3/4 lb. firm tofu
1/4 to 1/2 tsp. salt
1 tsp. rosemary
1/2 tsp. sage
1/2 tsp. thyme
1 1/2 med. onions, sliced thinly
1 1/2 med. tomatoes, sliced thinly
3/4 lb. total zucchini, summer squash, eggplant, and/or green pepper, sliced thinly
1/2 lb. coarsely grated cheese(s) of your choice

Preheat oven to 350 degrees. Mix soy sauce and garlic powder with 1/2 cup water to make marinade for tofu. Slice tofu in slices about 1/2 inch thick, place slices on their sides in a small dish and pour marinade over. Marinade for at least 10 minutes. Mix salt and herbs together in a small bowl or glass. Lightly oil an 8x8 inch or larger covered casserole, then layer ingredients in it as follows:

Onions, drained tofu, tomato, cheese, veggies, cheese, sprinkling some of the salt-herb mixture on each layer. Pour tofu marinade evenly over all, cover, and bake at 350 degrees for about 45 minutes until vegetables are tender. 6 regular or 4 generous servings.
