ROSEMARY POTATOES
 

3 tsp. olive oil
6-8 med. red potatoes, cut crosswise into slices
3 springs of fresh rosemary or 4 tsp. dried
Freshly ground pepper

Preheat the oven to 450 degrees. Place aluminum foil on a baking sheet. Brush olive oil on potato slices and arrange them on foil. Place 2-3 rosemary leaves under and over each potato. Sprinkle pepper on potatoes. Place another sheet of aluminum foil over potatoes.

Bake the potatoes for 15 minutes. Check for doneness. They should be tender.
