MARINATED PEPPERS
 

1 peck hot peppers, cut in bite size pieces
1/2 bu. sweet peppers, cut in bite size pieces
3 cans or more pitted black olives, drained
1 lg. jar green olives, drained
1 head cauliflower, cut in bite size pieces
2 c. sm. onions
2 c. carrot slices
2 c. celery, bite size pieces
1/2 c. oregano
1 1/2 - 2 c. salt
1/3 c. chopped garlic
4 c. vegetable oil
10 c. white vinegar
10 c. water

Mix all ingredients together well and marinate 24 hours. Stir often. Put in any size jars. Process in canner just long enough to seal jars. Or make 1/2 or 1/4 recipe and store in appropriate size covered container in refrigerator for several weeks.
