1/2 c. butter 1 lg. onion, minced 1/2 bell pepper, diced 1 qt. okra, sliced 4 fresh tomatoes, coarsely chopped Salt and pepper to taste Melt butter in large skillet or heavy pot. Add onion and saute over medium heat until transparent. Add bell pepper, okra, and tomatoes; season to taste with salt and pepper. Lower heat; simmer 20 minutes, stirring occasionally. Serves 8-10. |
