GNOCCHI DI PATATE - Potato Dumplings
 

2 c. mashed potatoes
2 c. flour
1 tsp. salt

Serve with your favorite pasta sauce or simply butter, garlic and Parmesan cheese.

Combine ingredients to form an amalgamated ball. Add flour as needed.

Turn out on a floured work surface and knead well. Add flour as needed. Knead 6 to 8 minutes.

Shaping the Gnocchi: The most popular is made as follows: Take a small quantity of dough and roll it into a long rope about 3/8 inch thick. Cut this into lengths equal to the width of a dinner fork. Place the tines on each piece crosswise and press into dough. The finished piece is fluted from the fork tines. (Or have the kids roll the pieces of "snakes" and cut them into 1 inch pieces.) Cook in boiling water like other pasta.
