Use the orange turnips; get half as much turnips as potatoes (i.e. 3 pounds potatoes, 1 1/2 pound turnips). Boil separately until tender (turnips take longer than potatoes). Drain well. Mash together with milk and butter until blended.
NOTE: Leftovers make great potato pancakes; mix with bread crumbs, parsley and chopped onion; shape into patties and fry until lightly browned on each side.
