2 c. grated zucchini 2 eggs 1 c. seasoned bread crumbs 1 tbsp. mayonnaise or salad dressing 1 tbsp. Old Bay seasoning 2 tbsp. grated onions Grate 2 cups unpeeled zucchini. Drain for 2 hours or long enough for water to drain from vegetable. Add 2 beaten eggs, bread crumbs, onion, seasoning and mayonnaise. Drop by tablespoon into hot oil until browned. |
