TWICE BAKED STUFFED POTATOES
 

4 med. Idaho baking potatoes
1/3 c. butter
1/2 c. grated sharp cheddar cheese
1/2 c. light cream
2 tbsp. fresh chives
3/4 tsp. salt
Dash of cayenne pepper
Paprika

Bake potatoes for 1 hour at 425 degrees. Cool. Cut in half lengthwise. Scoop out inside, leaving skin intact. With electric mixer, add potatoes with butter, cheese, cream, chives, salt, and pepper. Beat until smooth. Spoon mixture into shells. Sprinkle with paprika. Bake at 450 degrees for 30 minutes.
