1 1/2 lbs. carrots, cut into 2 1/2 x 1/4 inch strips
1/2 c. water
1/4 tsp. salt
3 tbsp. butter
2 tbsp. honey
In medium saucepan, combine water and salt; bring to a boil. Add carrots. Cover and cook over medium heat until carrots are tender, about 8 to 12 minutes; drain. In large skillet, melt butter, stir in honey. Add carrots; cook over low heat, stirring constantly until carrots are well glazed. 9 (2/3 cup) servings.
MICROWAVE DIRECTIONS: Place carrots in 1-quart microwave-safe casserole or bowl. Add 2 tablespoons water and salt. Cover with plastic wrap. Microwave on High for 10 to 13 1/2 minutes or until carrots are tender, rotating once halfway through cooking. In small microwave-safe bowl, combine butter and honey. Microwave on High for 1 to 1 1/2 minutes or until mixture boils; stir. Pour over carrots; toss until well coated. Microwave on High for 1 to 2 minutes or until thoroughly heated.
