BROCCOLI IN GARLIC BUTTER
 

2 lbs. broccoli
2 tbsp. butter
1 tbsp. olive oil or vegetable oil
2 cloves garlic, minced or pressed
1/2 tsp. rosemary, diced
Shredded Swiss or Mozzarella (optional)

Trim broccoli; cut into florets, leave 4 inch stems. Steam broccoli, covered, 12-15 minutes until bright green and tender crisp. Heat butter and olive oil in skillet. Add garlic and rosemary. Add broccoli to garlic butter and stir quickly over high heat until broccoli is coated. In serving dish, sprinkle with Swiss or Mozzarella if desired.
